Interviewers use this to separate the FDE who scales the company from the one who becomes a permanent dependency. The answer that sounds good but fails is 'I wrote great documentation and gave them my number for anything urgent' (the open phone line is the tell that the handoff didn't actually transfer ownership). The held-back follow-up is 'three weeks after you leave, they hit a failure mode you never saw, walk me through what happens' (they want the runbook plus escalation path to carry it, not you).
